2 clean + easy freezable recipes!


Freezing meals is such a brilliant idea and is so handy, especially if you are generally quite busy. We have a fridge freezer built into our kitchen which is very practical however my parents have quite a small kitchen and so keep their freezer in their garage. However, it recently broke..just before Christmas..eek! 
Did you know that if your freezer is stored in an environment below 0°C it can stop working? I had no idea and nor did my parents.. we were quite shocked! A great solution to this is to get a Beko freezer as they use their 'Freezer Guard technology' which guarantees to keep your freezer working in temperatures as low as -15°C...perfect! Anyway, onto the recipes! These recipes are delicious, both clean with fresh, healthy ingredients and of course, freezer friendly! 


Butternut squash soup.

Ingredients
700g butternut squash,
2tsp olive oil,
1 vegetable stock cube,
250ml boiling water,
generous pinch of salt,
½tsp cumin.. or more depending on taste.

Instructions
Preheat the oven to 175°C
Peel and chop the butternut squash into 2cm cubes. Cover in the oil and roast in the oven for 20 minutes or until soft. 
Place the butternut squash into the blender with the remaining ingredients and blitz until velvety smooth.
Serve and enjoy! (I served mine with a bit of cracked black pepper on top!)


Beef Stew.

Ingredients

1 can chopped tomatoes,
400g diced braising beef,
1 medium sweet potato, peeled and chopped,
1 large carrot, peeled and chopped,
300ml beef stock.

Instructions
Add everything to a slow cooker and cook for 8-10 hours on low.
Serve and enjoy!

Both of these will freeze perfectly for unto a month, I always use freezer bags as they take up less space in the freezer. Make sure you label them with what they are and the use by date!
