I have recently started trying to eat better and get back into my workouts like I was doing last year and so I have been baking and cooking from scratch a lot more. If you know me, you know I have a big sweet tooth and can't go without my goods so I have been scouring the interweb for clean eating dessert recipes. I came across this apple, cinnamon and raisin bake and it sounded perfect for Autumn/Winter but still generally healthy and clean.


Apple, Cinnamon & Raisin bake. 
(Recipe adapted from Food, Fitness & Family)

Ingredients
2 cups oats,
1 1/2 tsp baking powder, 
3/4 tsp salt,
50g raisins,
1.5 tbsp fruit sugar,
1 tsp cinnamon,
2 tbsp chia/flaxseed/linseed mix (use whatever kind you have or like)
3 diced apples,
1 whole egg
4 extra egg whites
few drops vanilla extract
1 cup unsweetened milk (rice, almond, oat.. any kind you like)
1 cup water

Method
Preheat the oven to 160 degrees.
Mix the oats, baking powder, salt, fruit sugar, cinnamon, chia/linseed together in a large mixing bowl, then stir in the raisins and apple.
In a smaller bowl, whisk together the egg and egg whites and then add the vanilla, milk and water and give a good stir.
Mix the wet ingredients with the dry and mix well.
Pour everything into a 8x8inch baking dish/tin and bake for around 40-50 minutes or until golden brown all the way across. 


Serve warm with some yogurt and you have yourself a healthy, clean dessert!
Top Tip: This makes a great quick breakfast for busy mornings served with some fruit. Also suitable for freezing.
