Toddler Treats; Apple Cinnamon Baked Oatmeal!

You may have seen on my Instagram that Sienna and I have been enjoying some baked oatmeal the past couple of days. I have attempted this before in the past but swapped a few ingredients and it has never tasted great, until now!

It really is yummy! Sienna loves it and I just find it much easier and less messy than regular porridge. I do warm it up slightly in the microwave but it only takes about 30 seconds. It's also great to grab if we need to get out the door quickly or good for an afternoon snack.


Apple Cinnamon Baked Oatmeal.
(Served 8 large squares)

3 cups oats,
2 tsp baking powder,
1 tsp salt,
3/4 cup raisins,
3 tbsp sweetener,
2 tsp cinnamon (or to taste),
2tbsp linseed, flaxseed & chia seed mix (mines from lidl, £1.99!!)
3 cups diced apples,
1 egg & 4 whites,
1 cup almond/soya/whole milk
1 cup water.. maybe a bit more if you think!

Method.
Preheat oven to 170 degrees.
In a large bowl, mix together the oats, baking powder, sweetener, salt, cinnamon, and linseed mix.
Stir in the raisins and apples.
In another bowl, whisk together the eggs & whites, then add the milk and mix.
Mix wet and dry ingredients together and mix thoroughly.
Pour into a greased baking dish/deep baking tray. Mine was about 11x7.5x1 inches and it was perfect!
Bake for 40-50 minutes or until golden brown.


I store it in the fridge for easy access during the week but this recipe is adapted from Madeline's and she says it freezes well too :)

Of course, this isn't just for toddlers! I enjoy mine in the mornings with my coffee and fruit too ;) Warmed up for about 1 minute, it tastes like apple pie, yumm!
