Healthy apricot cinnamon flapjacks (toddler friendly)

 Now pancake day is over, we can get back to the healthy eating, right? ;) This recipe was one I adapted from another recipe and to be honest, I thought it would be a flop as most of my recipes are but actually, it turned out delicious! Both me & the girls approved and it's a super quick recipe using just 5 ingredients.

These apricot, cinnamon flapjacks are the perfect healthy snack for busy mums, kids and even toddlers! Read more for the recipe...


Ingredients:
100g honey
200g oats
60g chopped, dried apricots
2 tsp cinnamon (more or less depending on your taste, or leave it out altogether!)

Method:
-Preheat over to 175 degrees C,

-Grease a small baking/cake tin with a little coconut oil, (I used a 20cm round tin)

-Melt coconut oil and honey together in a pan but don't allow to boil,

-Add in the oats, cinnamon and apricots & give a good stir,

-Press mixture into the greased tin, ensuring you pat it down so it's nice and compact,

-Bake in oven for around 25 minutes or until golden brown,

-Allow to cool before cutting (this is important otherwise it will just crumble!)


I love the combination of cinnamon and apricot but if they're not your tastes, switch it up! How about  adding in nutmeg & raisins? or vanilla & cranberries? The combination is endless!
